This is a sharp and sweet honey that has grassy, fennel & wildflower notes. The higher elevation, dryer climate, and hearty forage produce a "dryer" honey than the highly sweet, berry honey from the Willamette Valley.
Our honey is always raw, with a very coarse gravity filter that allows all the food value to remain and the larger objects to be removed. We never heat our honey beyond the natural temperature of the hive, so the enzymes remain in tact.
This honey does tend to crystalize a bit faster than most, which can be reversed by gently warming it in hot water or windowsill on a warm day. However, the crunchy- crystals are many peoples favorite part!
